Gardenia blue

Gardenia blue, a natural pigment, is obtained from the gardenia (Gardenia jasminoides ELLIS) fruit of the madder family by biological fermentation.

It is a very concentrated food-grade, water-soluble natural colour. Mix a little with water and use sparingly. The end result will depend on the concentration: pale blue to deep navy blue.
