The long stainless steel stem makes it easy to check the temperature of ingredients and mixtures while heating or cooling, particularly when working with water baths, melted oils, waxes and emulsions.

Avoid immersing the thermometer beyond the probe/stem unless the particular thermometer supplied is specifically rated for immersion.
